In just one hour of cook time, you will be serving up your friends and family a seafood feast that is perfect for summertime and the closest taste of the Maine shore.
3 lb. red potatoes, quartered
4 lobsters (about 1 ½ – 2 lbs. each)
6 ears fresh corn, shucked and halved
Step 1 – Steam the potatoes in 1” simmering water in a large pot for 20 to 30 minutes
Step 2 – Add two lobsters to a large pot, boiling on high. Cover, reduce heat to medium and cook 15 to 17 minutes or until antennae come off easily when firmly tugged.
Step 3 – Transfer to colander in sink and repeat with two more lobsters.
Step 4 – Steam corn in 1’ simmering water in large pot for 8 to 10 minutes.
Step 5 – Place potatoes, lobsters and corn in the center of the table. Serve with butter, lemon wedges, and dinner rolls.
