Shallot & Thai Chili Vinaigrette

Shallot & Thai Chili Vinaigrette

Ingredients:
¼ cup finely minced shallots
1 green and 1 red thai chili pepper chopped
¼ cup fresh lime juice
2 tablespoons of rice vinegar
1 teaspoon of white wine vinegar or champagne vinegar
½ teaspoon of extra virgin olive oil
¼ teaspoon of brown sugar

Directions:
STEP 1 – In a small mixing bowl, whisk together vinegars, lime juice and brown sugar. Stir in shallots and thai chili peppers.

STEP 2 – Gradually mix in the oil to make a smooth sauce.

STEP 3 – Pour mixture in a sauce container to use as a dipping sauce. Serve and Enjoy!

(Great for lobster meat served COLD)
